Violet Potato Petals and Guacamole my way
#PotatoChallenge
Profile: Amateur
A bed of violet potato chips, crispy and full of color placed as petals surrounding a central bowl of fresh and creamy guacamole. The visual and textural contrast is enhanced with a touch of toasted pistachios and freeze-dried raspberries for a perfect balance.
This dish celebrates the beauty and unique flavor of the violet chips, making them the true stars of the dish.
I wanted to start with the violet chips because I am an absolute fan of them and they had to be in this challenge. This is the first of some proposals that I have already made and that you will see in the coming days.
The process: Cook the potatoes, mash with a little of the cooking water and extra virgin olive oil. Spread between two baking papers with a rolling pin to make the paper, this time for the chips with a thickness of 2 mm. Dehydrated in the oven, cut with the hands in irregular pieces and “scared” in extra virgin olive oil (they are fried just a few seconds so that they do not lose color). I have been adjusting this whole process over time, trying some times with more success than others. This time they have been as I wanted😊.
Ingredients : purple potato, water, salt, extra virgin olive oil, avocado, lime, spring onion, pepper, pistachios, freeze-dried raspberry.
Techniques: Cooking, Shredding, Slicing, Emulsion, Dehydration, Frying.

Pétalos de Patata Violeta y Guacamole
#PatataChallenge
Perfil: Amateur

maloles, what a cheerful and lively proposal! 🟣🥑 From the name of the dish to the final result, everything transmits creativity and a lot of dedication. The color contrast between the purple potato chips and the guacamole not only catches the eye, but makes you want to try it right now! That final touch of pistachio and freeze-dried raspberry is delicious, because it adds texture and flavor with an original touch.
Thank you for sharing this proposal in such detail and joining the challenge, it is a luxury to see how you gave shape to the process!
And now, the big question… Do you plan to combine these chips with some other type of dip at a later date? It might be fun to see how they perform with more acidic or even sweet sauces.
Thanks for bringing so much good vibes to the community – you leave us hungry and full of ideas! ✨Level:Scoolinary Team

This is such a stunning dish! The vibrant violet potato petals paired with creamy guacamole look like a work of art 🥔💜🥑. The toasted pistachios and freeze-dried raspberries must add such a perfect contrast in both flavor and texture. Your process for the chips sounds incredibly meticulous and worth every second — the results speak for themselves! Can’t wait to see the other creative proposals you’ve got lined up for this challenge. 🌟

@lanamihajlovic Thank you very much Lana. The truth is that it has been a delicate process, although not difficult. Getting those chips not to burn and not to lose the color took me a few tries. But it was worth it 😉❤

@lanamihajlovic Mil gracias Lana.

what a woman… who never ceases to amaze us and to push the limits always a little bit further 💥 It is truly admirable to see your growth and, as I said to Beatriz Torija, the passion you put in is in every millimeter of the dish. And here it shows from the texture to the concept!
The choice of presenting the chips as petals is *crispy poetry*, and the contrast with the creamy green guacamole and hints of raspberry and pistachio not only works visually, but also promises a journey of textures and flavors. How did you get the chips to keep that vibrant color after frying them? That’s pure culinary alchemy!
Thanks for joining the #PatatoChallenge 🥔 Don’t forget to share this show in your stories and tag us with @scoolinary_es and the hashtag #patatachallenge. We’re ready for the next wonders you announced!Level:Scoolinary Team
