Squid tartar with liquid yolk, onion sauce and kaffir lime oil and amaranth suffused with dashi

      #PlatingChallenge

      Amateur profile

Ingredients: squid squid, egg, onion, fish fumet, extra virgin olive oil, sunflower oil, kaffir lime leaves, chives, kombu seaweed, dried bonito flakes, amaranth seeds, iota, espelette pepper, nori seaweed and salt.

Ever since I saw this dish, I dreamed of preparing it at home. And the challenge posed by Scoolinary and David Rickett has been the incentive I needed to get down to work. It is a complex recipe, with a thousand and one elaborations. But the result couldn’t be more worthwhile. When you mix it all together, it is unctuous, it fills your mouth with flavor, it is complex, intriguing, intense, tasty. For an instant, you make a round trip and silence falls.

This is a recipe by Paolo Casagrande, head chef at Martín Berasategui’s three Michelin-starred Lasarte Restaurant, included in the course ‘Cuisine, product, experience, knowledge, technique, avant-garde’. A real gem. Do not look at it from the distance and the difficulty, but from the “I’ll get there”, as a challenge. Because you will get there, believe me.

Wow sis, this is a true tribute to dedication and passion for culinary art! 👏 The photos are spectacular, but what impresses me the most is the way you describe the experience—as if you told a story through the dish. Huge respect for having the courage to dive into such a complex recipe; the result looks like a dream. An inspiration for all of us who love to push boundaries in the kitchen! 🍽✨

What a great job, Beatriz. You really achieved a dish that transmits dedication from all angles: visually it looks very well cared for, with a combination of colors that catches the eye and a presentation that invites you to try it without thinking twice. It is clear that you not only followed the recipe, but also lived it, and that is reflected in the result. 👏🏼👏🏼👏🏼

The mix of ingredients you used is super interesting between the dashi, the kaffir lime, the soufflé amanto and the liquid yolk, there must have been a very special explosion of flavors and textures. How was the process to get the yolk just right? Did you cook it under vacuum or did you use another method?

Something very positive is that you dared with such a detailed recipe, which sometimes can be intimidating, but when it is achieved, as in your case, it leaves you with that unique satisfaction of having crossed a personal goal. 🙌🏻 My advice would be to keep experimenting with ingredients like kombu seaweed or kaffir lime oil, which have a lot of potential to enhance even simpler dishes.

And now I’m curious… after this powerful dish, are there any others from the course that you were curious enough to try at home? ✨

            @beatriztorijagmail-com ¡Beatriz, qué maravilla leerte!
