      Gastrogenomics

      #PlatingChallenge

      Amateur profile

Ingredients: Carrot, orange, cauliflower, milk, fresh ginger, red cabbage, tomato, eggplant, zucchini, squash, cucumber, extra virgin olive oil, sherry vinegar, Chinese seven spice, star anise, iota, black pepper and salt.

Gastrogenómica is one of the historical dishes of the Sandoval brothers, from the restaurant Coque (**), and is part of the ‘Alta cocina española ‘ course
      spanish cuisine’
course . Gastrogenómica is a project launched by Mario Sandoval to recover the original flavor of vegetables.

Today I wanted to make my particular tribute to the vegetable world with this great dish that is an explosion of flavor and textures.

At the base of the plate, two textured creams, arranged alternately: carrot cream with orange, and seven Chinese spices. And a cauliflower cream with ginger. On top of them, grilled and griddle-marked vegetable cubes: pumpkin, eggplant and zucchini. On top, roasted tomato seeds and brunoise of pickled red cabbage. Around, some cucumber cubes osmotized in extra virgin olive oil. The dish is finished with fresh mustard and arugula leaves and a roasted beet tuille.

beatriz, what a creative and colorful proposal!

I was especially struck by how you combined the carrot cream with orange and the seven Chinese spices; it sounds like a mix with a lot of personality. How did you balance the citrus touch with the spices so that none of them dominates too much?

I also found the use of the osmotized cucumber very curious, which you don’t see much of – did you have to let it sit in the oil for a long time to get the flavor right?

Thank you for joining the challenge and for giving us this creative and colorful proposal. We can see the love and respect you have for the vegetable world, and how nice that you have chosen to pay tribute to such an emblematic recipe as that of the Sandoval brothers. ❤️

that already says a lot about the level of your inspiration! 🫶🏼

@sussan_scoolinaryteam thank you, Sussan. You’re right, it’s a tribute to the vegetable world, so versatile and sometimes we take less advantage of it than it really has. In general, for very spicy recipes I usually add a small amount and then I try and adjust, and that’s what I did on this occasion. And regarding the cucumber, I don’t know if less time would have been enough, but I left it overnight. But rather for leaving me elaborations done… in complex recipes or with many processes I do it that way 😬.

Thank you for your words, they really are a great help to continue to raise dishes and challenges 🙂

@beatriztorijagmail-com Beatriz, how interesting everything you share.
I love how you managed to find that balance between citrus and spices; it is not easy at all and you can tell that there is a very fine work behind it. I think the osmosis cucumber is genius: it’s a detail that adds technique and freshness to the dish, and elevates the proposal a lot.

Also, I think it’s beautiful how you managed to connect technique, creativity and homage. You can tell there is a story to tell in your dish, and that makes it even more special.

thank you for sharing your whole process with such generosity!❤️

Wow my sis!💞 Do you know how deeply your dishes move me? It’s not just the technique and knowledge you put into them, but the love you infuse into every ingredient. What a stunning homage to vegetables—this plate is pure artistry. The balance of technique and imagination is remarkable, from the osmotized cucumber to the roasted beet tuille. A true celebration of flavor, texture, and color that speaks volumes without needing meat or fish. Your take on Gastrogenómica is poetry made from vegetables. I’m so proud to know you. ✨
