      OXTAIL IN PARMENTIER MILLEFEUILLE.

This dish brings back very evocative memories,

At home we all like it very much and while I am preparing it, I remember when my mother used to make it, although in a different way.

I cook the tail from one day to the next, it is much better and it is also when I can shred it to be able to handle it to my taste.

I reduce the sauce for hours until I get the presence I want, I put a dot of butter to make it shine and also give it texture.

While I make the parmentier with that spectacular flavor, we like to add pepper and just enough butter to bring out the flavor of the oxtail.

When everything is ready I put it in a mold and layer by layer I form the millefeuille and accompany it with sauce.

I also fry some bread crumbs with crushed garlic that I put on top to give a crunchy touch.

Some more details on the plate to decorate

In a sauce dish, each person serves themselves as they like.

what a wonderful thing you prepared, Mercedes! I can tell you put a lot of love and dedication, not only in the preparation but also in the way you presented it.

The way you put together the millefeuille with careful layers and the sauce reduced to just the right point makes everything look super appetizing. And that detail of the crunchy crumbs with garlic is a great idea, it gives life to the dish and surely that contrast of textures makes it even more interesting.

I thought it was really nice how you connect the dish with family memories, that really makes it special.Have you ever tried giving it a fresher touch with herbs like chives or finely chopped parsley on top, just when serving? It might bring out the flavors more and also bring a touch of natural color.

Also, good idea to serve the sauce on the side! That way everyone can enjoy it at their own pace.
what was the most difficult thing for you when plating this dish?

Thanks for joining the challenge and sharing it. ❤️

This dish is more than just food – it’s a story, a memory, and a tribute all in one. ❤️ The way you’ve honored your mother’s recipe while adding your own touch is so moving. The slow-cooked oxtail, the buttery parmentier, the garlic breadcrumbs… everything sounds like pure comfort and elegance. You’ve truly turned tradition into art. 👏🍷🍽️
