Salad of tomatoes and candied sardines

Today I bring you a recipe that I learned some time ago from Joan Roca and that we love. For a dinner it is great and delicious as well as very healthy.

( A quick photograph and no time to prepare anything just before taking it out to the table )

This is how it is made:

Once the sardines are cleaned and bled for 15 minutes in ice water, we reserve them in a container suitable for a bain-marie.

Heat the oil at 50º C with the lemon peel, some basil leaves and a mixture of peppers.

Once hot, pour the oil over the sardines, cover the container and place it in a water bath, like a bain-marie, and cook for 6 to 8 minutes at 50ºC.

To quickly stop the sardines from cooking, cool the container in a water bath of cold water with ice.

Make a vinaigrette with the sardine cooking oil and vinegar.

Assemble the salad with tomatoes of different kinds, julienned red onion, the sardines and the vinaigrette. A little EVOO and if you have some green olives and basil (this time I did not use olives or basil).

The gentle cooking of the sardines is sure to leave them tender and full of flavor, and the vinaigrette with the infused oil is a total success.

do you think this technique would work the same with other small fish such as anchovies or mackerel?

Thanks for sharing this recipe with that touch of Joan Roca, it makes perfect sense for a special dinner. ♥️

This sounds absolutely exquisite! 🍅🐟 The technique of gently confiting the sardines must give them an incredible texture and depth of flavor. Love the idea of using the infused oil for the vinaigrette—so much richness and aroma in every bite! Definitely a dish worth trying. 👏🔥
