      #ChallengeTechniques

This weekend I was able to put the knowledge from the Thai Cooking course into practice.

It’s been many years since I tried Thai style noodles and the flavors became a must. Many times I have tried to look up the flavors through recipes on the web, to no avail. I have to say that this dish, noodle pad thai… and they have just become part of the must-have in my kitchen. I have varied the recipe a little, because the one explained in the course does not include vegetables. I did add vegetables to complete the dish, to make it a unique dish.

how do you know it won you over? Because I literally took a break and kept eating so I could finish it! I couldn’t just leave it there! 🤣🤣

Mind you, I think you should be warned about something very important: The smell of the fish sauce.
I was not expecting that. I thought I was dying… I ordered it online because I couldn’t find it in store and when I opened it I said: it arrived in bad condition!!!!! 😣🤢But I looked before on the internet… and yes, it must have that smell! We are not used to that! Mind you, when you put it all together, magic happens!

And this is something I’ve been thinking for a while: cooking is magic. How, with the same ingredients, depending on how you season them and how you combine them, you can have such different and delicious dishes.

In my case, everything is made in a wok so you get the vegetables cooked and crispy. I used sesame oil. A dish that made me happy!

Techniques used: the stir-frying of the vegetables in the wok, the boiled meat with the coconut milk (in Thai cooking it is known as tom cooking, as I have read), and the preparation of the pad thai sauce which is explained in the techniques section!
