I’m living in Peru, and like, out of 10 meals, I go for gazpachos 6 times when it’s summertime. I’m totally into their refreshing vibe for the full-on summer heat. My ultimate dish is all about marinated mushrooms, melon, and leafy greens.

Totally did, and I loved it! On my last trip to Peru (which has the most amazing food scene I know), I tried this mind-blowing 100% veggie gazpacho.

Oh… I remember it had cherry tomatoes, cucumber, some purple onion and a green pepper.
