Cartagena-style stew.
I’ve mentioned this traditional rice dish from my region before—it’s a dish that fishermen used to make with the fish they couldn’t sell at the fish markets, known as “roqueo,” which they’d use to prepare their own meals. Over the years, it has become very famous; it consists of broth with “roqueo” fish or small fish and a sofrito made with ñora peppers, garlic, and tomato—called “salmorreta.” It turns out spectacular, and I’ve managed to get it on the menu at the restaurant. The last photo isn’t mine, but I wanted to show you how it looks on the plate and, above all, the pot—called a “caldero”—where it’s prepared and served to customers.

Caldero cartagenero.
