• Hi, Scoolinary group! 😊 Could someone please help me with this question?
I’m trying to make a pineapple filling for a dessert, but I’m having trouble getting it to retain its texture and not release liquid after freezing and thawing.
I’ve tried preparing the pineapple in different ways, using gelatin and pectin, but I haven’t gotten the result I’m looking for. Cornstarch and other thickeners that need to be cooked don’t work for me either, because once the entremet is frozen and then thawed, the filling releases liquid again.
I’ve been looking for a pineapple insert recipe on Scoolinary, but I haven’t found one—or at least I haven’t been able to locate it.
I’d like to understand what ingredients or techniques can be used to create a stable pineapple insert that retains a good texture after freezing and thawing, without releasing liquid.
If anyone has worked with pineapple in this type of preparation and can share their experience, a recipe, or some technical advice, I’d really appreciate it! 🙏🏻
Thank you so much in advance for your help! ❤️
