      “Reinvented Marinera” Contest.

      I need your help. There’s a contest in the Murcia region for the best “marinera” (it’s a doughnut filled with Russian salad and an anchovy), and the restaurant where I work is entering. There are two categories: traditional and reinvented; we’re entering the reinvented category. So far, I have a crispy base with an eggplant salad and some slices of roasted chicken, but I’m missing a couple of elements, and that’s where I need help. On one hand, I have some dollops of aioli, which I’m not too sure about, and the idea of making a Parmesan cracker and breaking it over the top. What would you add? Here’s a photo (AI) with the Parmesan, but I’m not convinced.

        I’d skip the Parmesan. With an already crispy base it feels a bit redundant. I’d keep the connection to the original marinera with a light anchovy-lemon aioli and maybe fried capers or pickled shallot for acidity. That would give it more character without overcomplicating it.

            Coincido bastante con Lana: yo también quitaría el parmesano. La base ya aporta crujiente y, además, en la imagen las lascas terminan compitiendo visualmente con el resto. Para un concurso de “marinera reinventada” intentaría que, aunque cambie la forma, al probarla siga apareciendo claramente el recuerdo de la original. Ese alioli ligero de anchoa y limón me parece una buena vía, y sumaría un punto ácido muy limpio, por ejemplo chalota encurtida o alcaparra frita, sin añadir demasiados elementos. Haría dos pruebas iguales cambiando solo ese acabado y las probaría a ciegas con el equipo. ¿Qué sabor queréis que el jurado identifique primero como “marinera”?
