Viktoria: These are seriously ambitious desserts. The watermelon one is playful and surprising when you cut into it, while the black currant version has a much more dramatic contrast. What I like most is that just as much thought went into the inside as into the outside, with clearly defined layers and textures. I’d be curious to know how you balanced the sweetness with the fruit’s acidity, especially in the black currant one. I just think they’re perfect!
