🍪 Mini Pistachio & Raspberry Diamant Cookies and Swiss Cookies

Another delicious practice from the Sweet and Savory Cookies and Sablés course by Elena Adell.

This time, I prepared two recipes: Mini Pistachio & Raspberry Diamant Cookies and Swiss Cookies.

I really enjoyed working with these two different styles of cookies. The pistachio and raspberry Diamant cookies have a beautiful combination of nutty pistachio and fruity raspberry flavors, while the Swiss Cookies gave me another opportunity to practice precision, texture, and technique.

Each recipe from this course is helping me better understand the details behind professional cookie making and improve my pastry skills step by step.
