            😍 I have to admit that I’m a huge fan of huancaína, so this dish won me over right away. The sauce looks creamy and clings nicely to the pasta, and the pork tenderloin with the sautéed onions adds a great contrast.                 @juansebastiantorress ¡Hola Juan! La pasta de ají amarillo puede utilizarse directamente, pero su nivel de picante varía mucho según la marca y la preparación. Por eso no conviene medir el picante únicamente por cucharadas.
                Lo mejor es incorporar la pasta poco a poco: empieza con una cucharada, mezcla con el queso y la leche, prueba y continúa añadiendo hasta alcanzar un picante agradable. Reserva siempre un poco de la base sin ají para poder corregir la salsa si queda demasiado intensa.
                Si ya quedó muy picante, aumenta el queso fresco y añade leche evaporada gradualmente. Después vuelve a probar y ajusta la sal, porque el queso también puede aportar bastante sazón. La receta de Papa a la Huancaína combina pasta de ají amarillo, queso fresco y leche evaporada, y recomienda rectificar la sazón al final.
                Para conseguir una referencia más constante, puede probar primero una cucharadita de la pasta sola y anotar aproximadamente cuánta necesita por cada cantidad de queso y leche. Así podrá repetir después el punto que le haya gustado.
