      Salt on meat: before or after cooking.

      I need your help. At the restaurant, I’m in charge of all the main courses; we grill meat, and my boss says that when I bring the meat to room temperature, I have to salt it—and generously. Could you tell me whether it’s better to salt the meat before or after cooking?

        • Depende de la cocción de la carne y de lo que persigas: si buscas intensidad y es por ejemplo ternera plancha/brasa: sal maldon o en escamas al final es espectacular y evitas que la carne suelte jugo durante el cocinado. Para un solomillo Wellington, por poner otro ejemplo, en cambio, es mejor salpimentar antes. Hay una tercera opción que se me ocurre y que es la que usan muchos 3* Michelín: sumergir la pieza en agua y sal en crudo (antes de cocinar).
