• Chickpea and spinach curry. Ive taken to doing family meal at work so im testing this out.

        Hey Mike! This looks like a great test for a family meal. The chickpeas seem well coated in the spinach curry, and the naan has a lovely golden, blistered finish that makes the whole plate feel generous and comforting. For service, I’d watch the curry’s consistency so it stays creamy without becoming too dense as it sits. Are you planning to serve it as a vegetarian main, and what would you add to give it a little acidity or freshness?

        • @soldamiani I’ll keep it veggie. It does need some more liquid I agree. It has some tamarind in there, I’d quite like to add some red chillies for colour and heat and a little lemon juice

Red chillies will add colour and a cleaner heat, while a little lemon juice added just before serving will brighten the curry without muting the tamarind. To loosen it, add hot stock or water gradually so it stays creamy. Keep us posted on the next version!
