The garnish gives it a very elegant finish. What part of the process challenged you most, and what did you learn from the Classic Cakes course with Elena Adell?

@soldamiani I especially enjoy tasting new flavors; I didn’t find it difficult. I do find it interesting to work with new ingredients, such as pectin and the like—it’s a great learning experience to see how the texture changes. Before this, I only used gelatin.

@catiapequeno That’s a valuable step forward, Catia. Pectin gives you more control over texture and often creates a cleaner, lighter set than gelatin, especially in fruit-based fillings. Temperature, acidity, and sugar balance are key. Keep testing small variations, we’d love to see how your next cake evolves 😊
