• After finishing the first part of Leonardo Espinoza’s course, I decided to try making a cake. I chose Red Velvet because my daughter loves it very much, and we also have a family celebration, which is another reason. I changed the exterior look by deciding to make it more colorful and used Swiss meringue buttercream for the frosting. I tried very hard. I don’t really have all the tools yet, but I think for a first time, it’s not bad. And I decided to solidify my technique for French macarons and made a batch of them.

          I want to learn how to make puff pastry and Viennese pastries from it. Unfortunately, right now it’s terribly hot in my country, and I don’t have a special room with controlled temperature for the butter. I hope to try again from September onwards.For now, I’m trying out French desserts and techniques.
