My first éclairs. They didn’t turn out perfect, but I hope they’ll look better next time. Even though I followed the recipe, in the oven some of them decided they wanted a different shape. I’d appreciate it if someone could tell me why that happened. But overall I’m happy with them, and they are very delicious. I filled them with pastry cream and reduced cherries, and topped them with a ganache made with those same cherries.
