      Rice Dishes.

      Today I want to talk to you about a topic I’ve already mentioned several times, but I wanted to add a couple more things. I’m referring to rice dishes—or that much-maligned word, “paella.” I’ve always had a lot of respect for rice dishes because it’s not easy to make a good one, but since I’ve been at this restaurant—where, in just a few months, I went from cook to grill chef and now head chef, in charge of preparing all the rice dishes— I’ve really come to enjoy it, and the truth is that people leave very satisfied, and I’m delighted—not just because I’m making a good rice dish, but because I’ve overcome my fear of this great dish. I owe a lot to Scoolinary and its courses, since I’ve completed all of them related to Spanish rice dishes or paellas. I’ve learned a lot from all the professionals in the courses, but above all, I’ve added my own personal touch, and honestly, I’m very proud. That’s why my boss wants to open a rice restaurant and have me run it, but that’s a whole other story.
