It feels like I’m finding my way back to one of the things I love most… creating in the kitchen.
Lately, I haven’t felt very creative, but this morning, harvesting in the garden, surrounded by summer, I suddenly felt a wave of inspiration. And then my favourite kitchen tool – my vegetable spiralizer – did the rest.🌀
With this heat wave, I wanted to make something light, colourful and refreshing for lunch.
Fresh cucumber from the garden, onion, sweet pepper… and raspberries. 🤩
I turned them into a vibrant salad and served it alongside grilled cheese and thick slices of aged buffalo tenderloin.
      It was incredibly refreshing.

The raspberries added a surprising depth of flavour and a beautiful sweet-tart balance that brought the whole salad to life.

Don’t be afraid to combine fruit with vegetables or even meat. Sometimes the most unexpected pairings create the most memorable dishes.
Oh, and I almost forgot… I dressed the salad with a simple vinaigrette made from fermented garlic, fresh basil leaves, olive oil, salt and freshly ground black pepper.

Sometimes all it takes is a little inspiration… and a spiralizer. ❤️
