Red Cabbage Powder and Paper
Today I’m sharing the recipe for making red cabbage powder and paper from my #purple series.
The ones you see in previous recipes were made by slightly drying out the paste left over from curing fish to make use of it; I spread it out thinly on a Silpat, and it took longer to dehydrate. This is how it turned out after the entire process.
But this is the recipe I usually follow when starting from scratch:
It’s very easy—just boil the red cabbage with a little salt, blend it with a bit of the cooking water, and spread it out on a Silpat or, as you can see here, between two sheets of lightly greased parchment paper. If you want it really thin, roll it out with a rolling pin. Bake at 130ºC for about 60 minutes or until it’s completely dry (depending on your oven). Then just break it into pieces to your liking. For the powder, grind the pieces in a spice grinder until they’re very fine.

Polvo y Papel de Lombarda
Hoy os traigo la receta para hacer el papel y polvo de lombarda de mi serie #morado.
El que veis en las anteriores recetas lo hice secando poco de la pasta del curado de los pescados para aprovecharla, la puse en un silpat, bien extendida y tardó mas en estar deshidratada. Asà quedó después de todo el proceso.
Pero esta receta es la que hago normalmente si empiezo desde cero:
Es muy fácil, sólo tenéis que cocer la lombarda con un poco de sal, triturar con un poquito del agua de la cocción y extender en un silpat ó como veis aqui entre dos papeles de hornear engrasado ligeramente. Si lo queréis bien fino, pasad un rodillo. Hornear a 130ºC unos 60 minutos ó hasta que esté bien seco ( depende del horno). Y ya sólo romper en trozos al gusto. Para el polvo, triturar el papel en un molinillo hasta dejarlo bien fino.
