Trout marinated in mulberries and lemon, flaked over rabbit leg, pearl barley, cucumber and corriander leaves, and pickled red onion.

Great #FishChallenge entry, Sarah! The trout looks well handled and the mulberry-lemon marinade gives it a bold, personal angle; I’d tighten the final plating a bit so the fish stays the clear focus among the garnishes. How did you control the marinating time? Keep refining, there’s a lot of character here.
