Pictured below are 2 of my signature dishes. Red Snapper throats deep fried in beef tallow served with jasmine rice with an hot sauce burre blanc and Sof shell crab deep fried in beef tallow served atop a bed of corn maque choux with crab cake and hot sauce burre blanc

These look really bold and full of personality, Charley! I love the use of snapper throats, and that hot sauce beurre blanc sounds like a great balance of richness and heat. Very creative signature dishes!

Great signature work here, Chef Charley! The use of beef tallow gives both dishes a bold, deep character, and the snapper throats and soft-shell crab show strong product identity. The plating has energy and generosity, though refining sauce placement could add more precision. Strong, personal cooking 👏
