      The Art of the Handmade: Fettuccine with Rustic Pesto

      There is something deeply therapeutic and magical about making your own pasta from scratch. For me, it is the ultimate expression of passion for cooking and attention to detail.

      On this occasion, I wanted to put to the test what I learned in the courses “Pasta Fresca al Huevo” by master Igles Corelli and “Pasta Basics” by Xisco Jordà.

      🥣 The Process and Technique:

      • The Dough: I applied the techniques of careful kneading and rolling to achieve an egg pasta with the perfect elasticity and body. I decided to cut it into ribbons (fettuccine type) so that they would hold the sauce well.

      • The Sauce: I accompanied them with a rustic pesto full of aroma, which adheres perfectly to the porosity of the fresh pasta just cooked al dente (following the correct cooking times and methods taught in the course). A nice touch of grated cheese on top to crown.

      From the choice of ingredients to the final dish, every step was done with a lot of dedication. There is no comparison between commercial pasta and the silky, firm texture of a homemade pasta.
