I made it a few days ago, I am entering the world of brioche and at home I do not know what to do with so much! So I made this brioche textures dessert.
I made an ice cream with the crumb. A foam with the crust, some caramelized brioche cubes and a tile.
I improvised a couple of presentations
Lo hice hace unos dÃas, estoy entrando en el mundo del brioche y en casa ya no sé qué hacer con tanto! Asà que hice este postre de texturas de brioche.
Hice un helado con la miga. Una espuma con la costra, unos dados de brioche caramelizado y una teja.

This sounds and looks quite nice and appetising – makes me want to try it! 🙂 what do you think about the concept of brioche + marmalade? I feel like a little red would help the dish pop more presentation-wise and somehow it just sounds delicious to me (though this is an Interesting dessert already!)

¡Qué buena manera de aprovechar el brioche, Neus! 👨🍳 Hay una intención muy clara de trabajar texturas y eso se nota tanto en la composición como en el contraste visual. La espuma y el helado se ven muy cremosos, y los dados caramelizados aportan un punto crujiente muy apetecible. Personalmente, la segunda presentación se siente más equilibrada y limpia. ¿Te planteaste añadir algún toque ácido para cortar un poco la grasa del brioche? Por cierto, el nuevo reto ya está desvelado y fijado en la parte superior del feed de cocina 👀 ¿Te sumas?
