      Trout and Green Apricot Relish

      Uzbekistan has an abundance of ‘dovcha’ – unripe green apricots – and I wanted to see what could be done with them. This is a relish with green chilis, and despite the gentle taste of the trout, they go really well together!

        This is such a creative use of local ingredients! I love how you turned unripe green apricots into a relish and paired them with trout. Beautiful idea!
