I am an amateur. I took inspiration from Xevi Ramón and Hans Ovando. Well, it was not bad for the bad life I gave it. I had to extend the autolysis up to 4 hours. At that time I added salt. Folds every 45 min. It grew as if there was no tomorrow and I had to put it in the freezer for 3 hours. Then I formed it by giving it a lot of tension and left it in the fridge until the next day. I was very grateful that it turned out beautifully and did not take revenge

Soy aficionado. Tomé ña inspiración de Xevi Ramón y Hans Ovando. Pues no quedó mal para la mala vida que le di. Tuve que alargar la autolisis hasta 4 horas. En ese momento incorporé la sal. Pliegues cada 45 min. Creció como si no hubiera un mañana y me vi en la obligación de introducirlo 3 horas en el congelador. what a story this bread has! 😄 Even with this accelerated fermentation, you have achieved a good volume and a crimp that opens with character, that speaks very well of the final formation and tension. The crumb looks a bit more irregular and with denser areas, probably because of that uncontrolled temps. How would you adjust the fermentation to maintain that strength but gain uniformity?

¡Qué historia tiene este pan! 😄 Aun con esa fermentación acelerada, has conseguido un buen volumen y una greña que abre con carácter, eso habla muy bien del formado y la tensión final. La miga se ve algo más irregular y con zonas más densas, probablemente por ese descontrol en tiempos. ¿Cómo ajustarías la fermentación para mantener esa fuerza pero ganar uniformidad?
