      Inspired mainly by Hans Ovando and Xevi Ramón, I have prepared a sourdough bread mixing wheat, rye and rye flour. While the sourdough rises, I mix the water with the flour, so the latter is hydrated. When the sourdough is ready, I add it to the previous mixture and amalgamate it well. 15 minutes later, I spread the dough on the table, sprinkle the salt, wet my hands, and give it a little massage before starting to knead, to dissolve the salt. Knead for about 10 minutes, until the dough is smooth and shiny. Let it rest in a lightly oiled bowl and cover it with a shower cap. Every 30-40 minutes, we will make a series of folds, approximately 4 batches over 1:30-2 hours. With more heat, the time will be reduced, and vice versa. We form the bread generating a good tension. We will take it to the refrigerator until the next day. I bake the bread in an iron casserole, because this way I don’t have to worry about the steam. I introduce the pan for about 20 minutes at 250C. I draw the bread and bake it for 7 minutes. I take it out again and grease it. 18 minutes covered at that temperature. We remove the lid, lower the temperature to 205C and leave it for 25 minutes more. We take it out of the pan, leaving it half an hour with the oven off and the oven door open, to improve the crust.
