      Trigueros al Abrigo Ibérico

      These days I am making a lot of asparagus. It is being a good season and I like to try new ingredients.

      Yesterday I grilled them with olive oil, salt, garlic and parsley powder. Then I topped them with thinly sliced Iberian bacon, fried asparagus spears, garlic chips, drizzled with early olive oil and some sprouts. Finished with Physalis.

      As I told @soldamiani I discovered those little asparagus buds called turion. When sifting floured asparagus for frying, they were all like little “seeds” and I thought of frying them. You don’t know how delicious they are. I put them in my previous recipe, the burrata salad. They add a crunchy and salty touch wherever you put them, besides giving an important visual touch😉.

        ¡Qué presentación tan apetecible! La composición de los trigueros con la panceta y las chips de ajo crea capas de color y textura que llaman muchísimo la atención, y ese toque de physalis da un punto de color y frescura que equilibra muy bien el conjunto. Además, me encanta cómo has aprovechado los turiones fritos, aportan un crujiente sutil y un detalle visual muy especial. ¿Cuál fue tu parte favorita al montar el plato, la combinación de texturas o el juego de colores?

          @soldamiani Creo que las dos cosas pues fue intencionado. Quería ponerle la panceta y a partir de ahí pensé en algo más aparte del turion que ya tenía preparado . El ajo lo hice en un momento y los brotes que estaban listos para recoger .. disfruté cada pequeño detalle y el resultado nos gustó mucho. Ahora quiero probar a dar un toque de soplete a la panceta a ver qué tal resulta 😉
