Rice pudding cake.
Another cake that I used to make a lot and it was very simple, was the rice pudding cake; I used to put a stencil on top and decorate it with cinnamon. Here is the recipe. Ingredients. For the base. 200 g cinnamon cookies, 90 g butter and 10 g ground cinnamon. For the cake. 1500 ml of milk, 200 g of rice, 1 cinnamon stick, the peel of a lemon and an orange, without the white part (this bitter), 200 g of sugar and 2 envelopes of curd. Preparation. To make the base, crush the cookies, melt the butter and mix everything together with the cinnamon. Put it in the base of the mold and flatten with the back of a spoon and set aside to compact. In a saucepan put the rice, the cinnamon stick and the skins and the milk to cook over low heat, stirring from time to time. With about 10 m left to the rice, add the sugar and the curd. When we see that the rice is ready, we remove the skins and the cinnamon stick and we pass to the mold with the cookie bottom; we leave to temper and we put it in the refrigerator. When it has been half an hour, place a stencil on top and decorate with ground cinnamon. Leave a couple of hours in the refrigerator to cool completely. The first picture is of my cake, but as I could not make it in its entirety, I have put another picture so you can see how it looks.
