      Chickpea and spinach stew.

      We continue with the traditions of Easter. Chickpea and spinach stew is one of the most traditional, comforting and healthy dishes of Spanish gastronomy, being an indispensable classic, especially during Lent and Easter. This recipe stands out for its versatility, allowing you to enjoy it both in its Andalusian version (drier and spicier) and in more brothy stews or with cod.

      Traditional recipe for chickpea and spinach stew

      Key ingredients: Chickpeas (cooked or soaked), fresh spinach, garlic, onion, bread (for “majado”), sweet paprika, cumin, bay leaf and extra virgin olive oil.

      The secret (“El Majado”): To achieve a thick texture and authentic flavor, garlic and slices of bread are sautéed and then crushed in a mortar with cumin and vinegar, adding this mixture to the stew.

      Quick preparation (express): Using boiled canned chickpeas and spinach, it is possible to have the dish ready in about 10-15 minutes.

      Popular variations in Spain

      Potaje de Vigilia (with Cod): Desalted and crumbled cod is added to the basic recipe, along with chopped hard-boiled egg for garnish.

      Spinach with chickpeas Andalusian style: More like a tapa, it is a stew with less broth, where the breadcrumbs, garlic, cumin and a touch of vinegar are fundamental.

      Ingredients (for 4 persons):

      400g – 500g of cooked chickpeas

      300g – 400g of fresh spinach

      1 chopped onion

      3-4 cloves of garlic

      1 slice of bread (for the mashed bread)

      Sweet paprika and ground cumin to taste

      Vegetable broth or water

      Extra virgin olive oil

      Steps for the preparation:

      Sofrito: Poach the onion and garlic in a pot with olive oil. Add the paprika and, if desired, crushed tomato.

      Mashing: Fry the bread and garlic, crush them in a mortar with cumin, vinegar and a little broth.

      Cooking: Add the chickpeas and spinach to the pot. Add the mashed mixture and cover with water or broth.

      Finishing: Let it cook over low heat for about 10 minutes so that the flavors are integrated.

      This stew is perfect for any time of the year, offering a nutritious and full of flavor option of the Mediterranean cuisine.

      – Stir and, when the temperature of the dough allows it, knead with your hands, first in the bowl and then on the counter.

      We sprinkle a little flour on the worktop.

      (The dough should be homogeneous, compact and with a rubber band)

      – Cut a piece of dough and give it an elongated shape.

      We cut it into pieces of about 50 g and give them a round shape (we wrap them)

      – We take each piece and give it an elongated shape.

      -We make 4 cuts and join the ends.

      – Place the rolls on the baking tray and paint with a brush with beaten egg.

      Sprinkle them with sugar and put some sliced almonds on top.

      – Bake for about 20 minutes at 180 degrees with the oven preheated with heat up and down.
