      Roasted Leeks with Creamy Cheese, Yogurt and Pistachios

      I think it’s one of the tastiest things I’ve tried lately. I had seen many recipes for leeks but I finally made my own to my taste and it was delicious.

      Ingredients:

      Leeks

      Extra virgin olive oil

      Salt and pepper

      Cream cheese

      Greek yogurt

      Toasted bread

      Pistachios

      Salt flakes

      Parsley

      Freeze-dried raspberries

      Preparation:

      Clean the leeks, use only the white part ( the rest you keep for some cream or soup). Remove the first layer and cut them into pieces to your liking and then cut them lengthwise.

      Place them in an ovenproof dish, add a drizzle of extra virgin olive oil, salt and pepper.

      Bake them at 180 °C, take them out after 30 minutes, remove the outer layer and sear them in a frying pan. Set aside.

      *If you do not want to mark them in the pan, you should bake them until they are tender, depending on your oven.

      While they are in the oven, prepare the base with cream cheese, a few spoonfuls of Greek yogurt, parsley and some pistachios and toasted bread previously crushed to taste. Mix everything well.

      Plating:

      Spread the cream and place the leeks, a drizzle of olive oil, pistachios, salt flakes, parsley, freeze-dried raspberries.
