      Sanguine Orange and Honey Cake

      Today was my birthday and I felt like making a cake. It is not an elaborate cake like the ones I used to make (I still don’t feel up to it). Something simpler but especially tasty. The recipe is from Marcos Tuero @baroque.studios who very kindly passed it to me yesterday on Instagram.

      I invite you to a little piece while you read the recipe :

      Ingredients:

      4 Tbsp brown sugar

      115 gr extra virgin olive oil

      75 gr of cream or natural yogurt

      2 or 3 blood oranges

      3 eggs

      210 grams of sugar

      1 teaspoon vanilla

      200 gr wheat flour

      1 tablespoon of baking powder

      zest of 1 blood orange

      4 or 5 tablespoons of honey (* I used Agave Syrup )

      Method:

      1️⃣ Line the bottom of a 23-24 cm round springform pan with baking paper.

      2️⃣ Grease the sides and bottom well with butter and sprinkle with 4 tablespoons of brown sugar.

      3️⃣ Wash and thinly slice 1 or 2 blood oranges. Place the slices in a single layer in the bottom of the pan.

      4️⃣ Mix the oil with the yogurt and set aside.

      5️⃣ Beat the eggs, sugar and vanilla until very light in color and texture, about 2-3 minutes.

      6️⃣ Mix the flour, baking powder and a pinch of salt in a bowl. Gently fold the flour into the egg mixture. Add the oil and yogurt mixture and the orange zest to the batter and mix gently until smooth.

      7️⃣ Pour the batter into the pan over the oranges.

      8️⃣ Bake the cake in a preheated oven at 170 degrees for 40 to 45 minutes or until the top of the cake is golden brown and a toothpick comes out clean.

      9️⃣ Let the cake cool 5 minutes before turning it out onto a wire rack to cool completely.

      once cooled and before serving, heat the honey in the microwave for a few seconds and brush the surface of the cake.
