      Potatoes a la riojana, or potatoes with chorizo, are a typical first course originally from La Rioja, although its consumption has spread to nearby regions. It is a dish with three main ingredients: potatoes, chorizo and paprika. It is served hot. History. The consumption of potato in broths in the peninsula comes from Napoleon’s invasion. In the 16th century this ingredient entered Spanish cuisine. In the town of Aldeanueva de Ebro, potatoes were used to feed the day laborers, and there, during the threshing work, the potatoes from the threshing floor were mixed with Rioja chorizo preserved in daggerboards. Characteristics. Technically, Rioja-style potatoes are potatoes stewed with chorizo, onion, garlic and bell pepper. It is prepared mainly with potatoes, chorizo sausage, chorizo peppers, paprika and bay leaf. A curious fact for its good elaboration is that the potatoes must be cracked (triscar, in Riojan) so that they release the starch and thus fatten the sauce.
