In the #MexicanChallenge I presented these tacos de oreja and now I present it to you as the challenge #AntesYDespuesdeScoolinary, yes, yes the before and after, do you know why? Because when you feel very confident about what you do you have to defend it to death, and of course many people can give these tacos thousands of turns, but for me there is a before and an after in these grilled ear tacos with pico de gallo; the before is when I created them and the after is when I confirm that they do not need changes to be a good dish. I know that many will say that they can be improved, I don’t deny them, but for me they are what I wanted to make and that’s why I present my before and after. Before they seemed to me a delicious dish and now they seem to me a dish that has evolved being the same dish.

En el reto #MexicanChallenge presenté estos tacos de oreja y ahora os lo presento como el reto de #AntesYDespuesdeScoolinary, si, si el antes y el después, ¿sabéis por qué? Porque cuando uno se siente muy seguro por lo que hace tiene que defenderlo a muerte, y claro que mucha gente le puede dar miles de vueltas a estos tacos, pero para mi hay un antes y un después en estos tacos de oreja a la plancha con pico de gallo; el antes es cuando los creé y el después es cuando confirmo que no necesitan cambios para ser un buen plato. Sé que muchos dirán que se pueden mejorar, no les quito la razón, pero para mà son lo que querÃa hacer y por eso les presento mi antes y después. Antes me parecÃan un plato riquÃsimo y ahora me parecen un plato que ha evolucionado siendo el mismo plato.
