After finishing the second course of Chema Soler, “Spanish Tapas”, the first one was about croquettes; I am amazed how a person can reinvent himself and go from working in a textile factory to become a professional in the hospitality industry and have two books published. The one about croquettes taught me something I didn’t know, that the world of croquettes is bigger than I imagined, and this second one, the one about ensaladillas, I know I’m going to learn a lot, a lot, about this wonderful dish. Thank you, @chemasoler, for passing on your wisdom.

Después de terminar el segundo curso de Chema Soler, “Tapas españolas”, el primero fue el de las croquetas; alucino cómo una persona se puede reinventar y pasar de trabajar en una fábrica de textil a hacerse todo un profesional de la hostelería y tener dos libros publicados. El de las croquetas me enseñó algo que no sabía, que el mundo de las croquetas es más grande del que yo imaginaba, y este segundo, el de las ensaladillas, sé que voy a aprender mucho, mucho, sobre este maravilloso plato. Gracias, @chemasoler, por transmitirnos tu sabiduría.

I finished the Spanish Tapas course this morning, and it was very insightful. I cannot wait to get some time from my busy life to get in the kitchen and make some of the recipes. The tiger mussels, garlic shrimp and Torreznos are all earmarked for duplication.
