Today I want to talk about another great product of the coast of Cartagena and it is the caldero rice. The Caldero de Cartagena was born as a humble dish of fishermen of the Mar Menor, who cooked with fish not suitable for sale (morralla) and rice in an iron cauldron hung over firewood on the beach, creating a nutritious and tasty stew based on rock fish, ñora, garlic and tomato. Over time, it evolved from subsistence food to a gastronomic emblem of the region, traditionally served in two parts: the mellow rice and the fish on the side, often accompanied by aioli. If you have the opportunity to come to my land, ask for it in a famous place; you will see how delicious it is.
