      remember yesterday’s broth? Well, these wonderful chicken and vegetable lentils are cooked with that broth. I will tell you how I make them. If I use a very strong flavor broth and I am afraid that with prolonged cooking they will be a little salty. I wash the lentils and put them to cook with water, a bay leaf, 4 or 5 peppercorns and a head of garlic. When they are cooked for about 20 m, I throw away the water and reserve the lentils, make a sauce, add the chicken and the vegetables and then I put the chicken broth and the lentils half cooked. And they come out very good. With that I get that the broth is not salty. Maybe you think it is a mess, but once, I made a broth that was very good and very powerful in flavor, but when I added it from the beginning to the cooking of the lentils, it reduced a lot and had its point of salty, and I had not put salt, but the broth had ham bones, veal and vegetables and had that point raised of “salt” that in fact was strong in flavor.
