      These are the peppers stuffed with cod pilpil the other day. The recipe is very simple. I took two pieces of cod and removed the skins. In a frying pan I put extra virgin olive oil, the two pieces of cod, the cod skins and two cloves of garlic sliced over low heat. When the cod was juicy, I took it out and started to make the pilpil with a small strainer until the oil and the jellies of the skins emulsified, I reserved off the heat. Separately, I mashed the potatoes adding a little milk, the crumbled cod, the garlic slices and little by little I added the pilpil so that it mixed well with the rest of the ingredients; the mixture should not be too liquid. I put it in a piping bag and filled the piquillo peppers one by one, put them on a tray in the oven and heated them. On top I added an Iberian hollandaise sauce, although the idea of finishing the dish is to make a bechamel sauce with part of the piklpil and gratinate them, but that in another post.
