• Bite of hake ceviche on crunchy corn and tiger’s milk butter

      In the sixth week of the “Learning Route: New Cooking Techniques” we have delved into cold cooking techniques. In the Savory Snacks course Fran Agudo shows us some of these techniques with a recipe for Lemon Fish Ceviche Bocado.

      I had to adapt the recipe a bit, because I couldn’t find the lemon fish, nor the aji amarillo paste, nor the Hondashi sauce.

      I made the freeze-dried corn crisp with its methyl base and on top of it I put a butter made with tiger’s milk and inulin. Instead of lemon fish I used a hake loin to marinate the fish. And the finishing touches are a dash of ali oli sauce, salt flakes and orange zest.

      The result is tasty and the new techniques used are very interesting.
