      In a previous post I mentioned that I was looking for the best Easter bread, I was looking for an alternative to panettone

      So it was that while researching the European influence on the continent I came to the Argentinian panettone, a variant of the Italian panettone

      But it was not enough, there was room for improvement

      I altered the formulation of the recipe, changed the working parameters, gave it the same 3-day long fermentation treatment that the Italian panettone requires, used a strong flour and the result left me amazed

      I would say it is the biggest challenge in my career so far, I can not say it is a panettone because its formulation and baking percentage are different

      But today I can proudly say that I am getting closer and closer to mastering one of the most difficult techniques in the world bakery
