      This morning I decided to bake some mantecados, to start Christmas, since my daughter loves homemade mantecados, I do it every year, this year I decided to put black sesame seeds. If you like them I recommend you to make them.

      Mantecados of olive oil

      100 gr of toasted or fried almonds

      620 gr normal wheat flour

      220 gr sugar

      2 teaspoons cinnamon powder

      zest of lemons or a few drops of essence

      pinch of salt

      250 gr soft olive oil

      Sesame seeds, or crocanti and icing sugar for sprinkling

      Preparation

      Chop the almonds into small pieces

      Then add the flour, sugar, cinnamon, zest or essence, and mix all the dry ingredients first.

      Finally add the oil and the chopped almonds and knead for 2 minutes. We finish mixing by pressing the dough well, form a ball, and take it to the refrigerator for a couple of hours to take flavor and consistency.

      Preheat the oven to 180º

      Sprinkle a little flour on the table, and stretch with a rolling pin, gently because the dough breaks. And when we get a thickness of 1/2 cm or so, we cut it with a pastry cutter, sprinkle the sesame seeds or crocanti.

      Bake for 18 to 20 minutes.

      Let cool completely, and enjoy the flavor.
