I know that many will say that the flan does not have to have holes in it because if it does, it means that the mixture has been badly beaten, but I think it gives it its personality and you know that it is homemade. The photo on the left is of the flan I make; the one on the right I took from the internet to show you the difference. There is nothing wrong with holes in them, but there are customers who think they are undercooked. When you beat the mixture, if you do it too fast, bubbles come out and when you cook them, they become those holes, but a solution is to strain the mixture through a sieve and eliminate them. How do you like it better, with or without holes?
