Someone once told me that there were certain degrees of poetry in the act of preserving flavors in rum and today I think I understand why
It has now been two summers, two crops and two harvests that have been completely different and that have been reflected in the rum
When this conserve was one year old, the rum presented reddish and purple tones, with berry flavors predominating
Now the tones are orange, its flavor is more difficult to explain, first it envelops you with notes of peach, there is some acid like apple and orange that end again in red fruits
Today I find myself in another city, with another climate, with other fruits that did not occur where it all began
Rumtopf could be another of the many love letters that humanity has dedicated to gastronomy and that the poetry that surrounds them is the fact that they will never be the same
Letters with flavors of summers past, letters from a place I may never return to
Letters that I wrote with sugar and that I kept in rum

Una vez alguien me dijo que habÃa ciertos grados de poesÃa en el acto de preservar sabores en ron y hoy en dÃa creo entender el porqué
Han pasado ya dos veranos, dos cultivos y cosechas que han sido completamente distintas y que se han visto reflejadas en el ron
Cuando esta conserva tenÃa un año el ron presentó tonalidades rojizas y moradas, sabores a bayas que predominaban
Ahora los tonos son anaranjados, su sabor es más difÃcil de explicar primero te envuelve con notas de durazno, hay cierto ácido como manzana y naranja que terminan nuevamente en frutos rojos
Hoy me encuentro en otra ciudad, con otro clima, con otras frutas que no se daban donde empezó todo
El rumtopf podrÃa ser otra de las tantas cartas de amor que la humanidad ha dedicado a la gastronomÃa y que la poesÃa que las envuelve es el hecho de que nunca serán iguales
Cartas con sabores de veranos pasados, cartas de un lugar al que tal vez nunca volveré
Cartas que escribà con azúcar y que guardé en ron
