Tuna Empanada

Traveling is wonderful, when I’ve made long trips I never get tired… however, after a month, and sometimes more, away from home, to be reunited with your kitchen and your flavors when you return is comforting. And so is this traditional tuna and tomato empanada. Recognizable and comforting after a long Asian journey.
It is a simple, honest and deeply rooted dish. This empanada, with canned tuna, tomato sauce, onion and bell pepper is a symbol of reunion. It is usually made and shared. A celebration wrapped in dough, a golden and warm promise that tastes like home and a shared table.
Type of dough: In the north it is usually made with a more bready dough, although I have to admit that I miss the empanada with a more flaky dough. And that has been the one chosen in this proposal.
Filling: Canned white tuna with tomato sauce, onion, green bell pepper, green olives, salt and freshly ground black pepper
Closing: Place the filling well spread on a dough base. Close with a lid, slightly smaller in size. Close by rolling the ends of the base over the lid.
Type of cooking: Baking. It is a dry baking (with dome and hearth heat and without fan), for 30 minutes at 190°C
