      Ha Gao of shrimp

      #FoldingChallenge

      Amateur

I continue my journey for this #FoldingChallenge… but without leaving China. Of course, from the north of the country, we go to the south, specifically to Hong Kong, with one of its most traditional snacks: the Ha Gao shrimp.

They are like small shrimp sighs, full of intention and flavor. Among the mists of steam that emerge when opening the bamboo steamer, these small, delicate, translucent, elastic, trembling, full of folds. A small luxury, simple and full of art. The steam dissipates, and the taste remains, and the feeling that I will not be able to do without these dumplings.

Dough type: translucent and elastic, gluten and fermentation free, made with a mixture of tapioca, rice and potato starches, which are mixed with hot water to obtain its soft and flexible texture.

Filling: shrimp with grated carrot, spring onion, water chestnuts, sesame oil, oyster sauce, salt, pepper and Chinese salt.

Closing: The usual closing is by making folds to give the dumpling a characteristic shape… although I opted for the half-moon shape.

Type of cooking: steaming in a traditional bamboo steamer
