this anecdote, like many of the ones I share with you about my dishes, begins with “my husband” I tell you that my husband is from a state called Hidalgo, where Pastes are very typical, which are a kind of baked empanadas, filled with a variety of sweet and savory dishes, the typical ones are potato with ground beef, mole and apple, although the sky is the limit.

This snack is the product of the union of two cultures, the English and the Mexican, since being a mining area, many companies from that European country settled and brought us the beautiful and delicious dough, made of flour, eggs and lard, which here has been adapted with a very special ingredient that is the pulque, which is a drink of pre-Hispanic origin that comes from the maguey stalk, in the end, the pastes became the food of the miners par excellence.

To make a long story short, when we got married, I brought my husband to Veracruz, and what he missed the most was his family and pastes, bringing his family to live in Veracruz is mission impossible, so to surprise him, I learned to make pastes, and now he feels closer to his homeland.

So today I present to you some pineapple and cinnamon compote pastes, which are my favorite, it is not a traditional filling, it is a filling that I devised for myself, and it is my favorite, to finish they are sprinkled with sugar prior to baking, so when they come out, the surface is sweet and crunchy. #FoldingChallenge

¿Significa algo?
