      Takoyakis stuffed with octopus

      #FoldingChallenge

      Amateur

For this #FoldingChallenge I wanted to travel to Osaka, Japan, with these takoyakis. It is a fleeting, street food, to take almost in one bite. Born from the hustle and bustle of the Japanese streets, but with all the calm of the world enclosed in its perfect spherical shape. Crispy on the outside and tender on the inside, takoyakis offer all the depth of flavor and umami provided by dashi broth and katsobushi. But with the freshness of pickled ginger and cabbage, the tenderness of octopus… and the touch of nori seaweed and a slightly spicy sauce.

It is street food, but also ceremony: an ephemeral instant that encloses the taste of the waves and where the humble becomes art.

Type of dough: whipped liquid dough, made with wheat flour, dashi broth and egg. Pickled ginger, spring onion, cabbage and tenkasu (tempura crisp) are added to the batter.

      Filling: octopus

Closing: there is no actual closing, but the balls are formed by turning the dough little by little with special chopsticks. The biggest challenge is to get the octopus filling centered.

Type of cooking: griddle, on a special iron griddle for takoyaki.

I pass the torch to @mercedesminayapalaciosgmail-com… I think this is a challenge for you. Empanadas, empanadillas… or those stuffed pani puris you sometimes make. Are you up for it?

        ¡Bea, esto está brutal! 🙌
