Tropical Salad with Pickled Walnut Vinaigrette

I was looking forward to trying the magical liquid from the pickled walnuts that Beatriz and I experimented with together for four months.

I wanted to make something special but I was afraid of messing up something that I couldn’t fix later. So I made this salad with the different fruits I had at home at the time.

Cakis, melon, kiwi, pitaya, peach, pomegranate, freeze-dried raspberry. I made some cuts to the fruit and I was assembling the dish. I confess that at first I was not sure about the vinaigrette and I put a splash of liqueur 43 and a little bit of orange juice 😎.

It was nice, it was tasty and I thought about leaving it for dessert (I would try the experiment another time) But then I looked at the leftover fruit trimmings … I opened the jar of pickled walnuts, took a little bit of the liquid and emulsified with a good AOVE from my land and blackberry salt … and inside the trimmings with everything I had put before.

The magic was done ! With the liquor, the juice, the different fruits…that special vinaigrette brought notes of wood but very subtle and even elegant I would say. No one will be able to imagine or find the secret ingredient unless it is said.

So yes, I could finish this salad born from intention, respect and doubts. I am HAPPY for the result🙌🎉❤️
