Dulce de Calabaza 2.0

I told you I would make a 2.0 version of Dulce de Calabaza and here it is. Paloma Ortiz’s recipe from the Dia de Muertos Mexican Cooking course that I made in my first proposal but with a totally different twist in its presentation.
After making the original recipe, I set aside a little bit of that candy and put it in a mold. I took it to the freezer with the idea of being able to unmold it without losing its shape. And while I was at it, I wanted to check how it behaved once frozen. At this point it is the same as the first day, in taste and texture. Thus, it will have infinite variations, as many as molds we have in the cupboard😉.
But there was something else left to give an important visual effect. I made a Tuile which is extremely delicate by design. At first I wanted to put it on top, crowning the candy but when I gave it the shape, it began to break and I had no choice but to put it on the base. I have to practice with it because it looks beautiful in a curved shape. I will tell you that I like it both ways, and also without it.
The other important element and why I have waited until today to share it is the plate that arrived a few days ago and could not have had a better debut. It is part of my latest acquisitions, you should have seen my husband’s face when he saw everything 🤣
I loved this challenge, I have learned a lot with Paloma Ortiz’s courses. I will be trying more of her recipes because I have fallen in love with them. Thank you!!!

Gracias!!

This looks absolutely stunning! Such a creative and elegant version of Dulce de Calabaza! 😍 I love how you played with the textures and presentation, especially the Tuile base. It gives the whole dish such a sophisticated touch. And that plate… what a debut indeed! 👏 You can really see the love and thought behind every detail. Paloma Ortiz will be definitely proud! ♥️

¡Hola, Looooo!
